This easy Easter cookies recipe makes over a dozen of the biscuit treats and is ideal for making with the children.
Ingredients
100g of butter
175g of light soft brown sugar
4 tablespoons of golden syrup
350g of plain flour
1 teaspoon of bicarbonate of soda
2 teaspoons of ground ginger
1 large beaten egg
Grated rind of one lemon
65g of icing sugar
1 tablespoon of lemon juice
Chocolate mini eggs for the decoration
Directions
Preheat the oven to gas mark 5 or 190C.
Grease two large baking sheets.
In a saucepan gently melt the butter over a low heat and then add the sugar and syrup until smooth. Set aside to cool.
Sift the flour, bicarbonate of soda and the ginger into a large mixing bowl.
Stir in the butter mixture and then add the beaten egg and the grated lemon rind. Mix together to form a dough.
Spread some flour onto a rolling surface and roll out the mixture.
Use a 7.5 cm round cutter to press out and form about 20 cookie biscuits.
Transfer the cut Easter cookies onto the baking sheets. For better effect form the top and bottom into an oval egg shape.
Bake in the preheated oven for about 10 minutes so that they turn golden brown.
Remove from the oven and set aside to cool down.
Mix the icing sugar with the lemon juice to form a small mixture of icing that can be used to stick the chocolate sweets to the baked Easter egg cookies.
Put aside to set and enjoy later!
